RECIPE
Chop fresh cucumber and apples into small cubes and blend until smooth. Strain with a sieve to remove solids. Pour into container and freeze for 6 hours. Once frozen, use a fork to scrape into a crushed ice texture.
Put the granita into a glass. Combine 50ml fresh lemon juice with 1 egg white and 1½ tsp sugar and use a hand mixer to whip into a stiff foamy texture. Spoon on top of cucumber and apple granita and serve immediately.
